As loin of veal is often on offer in my nearest Supermarked this is what I like to buy when we have guests for dinner.

Unfortunately the loin of veal I bought had a tendency to be a little tough, even a little boring, so I was asking around to find a way to make this meat more tender and tasty.

I found the secret to make this cheap meat tender and tasty, and I guess it will work for other kinds of meat than loin of veal:

Slow Cooking was the answer!

I have heard about different versions of the slow cooking, but this one  has worked miracles for me.

How To Do It:

Preheat the oven to 350 F (180 C).




You clean the loin of veal for tendons.
Cut the top of the meat, the fat, and rub the whole piece of meat with salt and other spices if you want that.
I always use a lot of salt, it makes some very tasty slices when you cut the meat.

When the oven is warm enough, place the loin of veal on the grate and let it stay in the oven for 10 min.
Take it out of the oven and let it rest, without being covered, for 10 min.

Place it again on the grate in the oven for 10 min.
Take it out of the oven and let it rest, without being covered, for 10 min.

Place it again on the grate in the oven, now let it stay there until the inner temperature is approx 133 F (56 C) in the center.
With a piece of meat 100 g that will normally take 15 – 18 min.

Now take the meat out of the oven and wrap it in 3-4 layers of aluminum foil and leave it for 45 min before you slice it and serve it. (see below the best way to slice a loin)
You will be surprised how tender and delicious this “not so expensive” meat is now!

To make the slices of the loin of veal even more tender and juicy you should cut the meat like this:

Start cutting from the pointed end of the loin of veal.
When you have cut approx. 1/3 of the piece of meat, turn it around and cut in the other direction as showed on the drawing below.

Low Carb Meatballs in Curry

This dinner idea for meatballs in curry is guaranteed to be a success with both low carb eaters and other family members!!


I don’t have the exact recipe, kind of just made it up on the way, but it is so simple there will be no problems making it.

It consists of meat balls made of minced chicken stirred with eggs and psyllium husks and a little almond flour, not too much though or the meatballs will become a little boring.
If you like you can use other kinds of minced meat, I’m just into chicken meat these days.

As you maybe can see from the little green spots on the photo of the force meat below I often add blended onions and blended vegetables like broccoli and squash, because it is an easy way to make sure you get enough vegetables.

I serve this dish with rice for the kids, but for low carb fans I always serve it with the broccoli-cauliflower-rice.

Stir this mixture well.
Boil water in a pot, and add little meatballs to cook for approx. 5 min.
The easiest way to make the meatballs is to use a small table spoon, dipped in melted butter.
Take a spoon full of forcemeat and place it in the boiling water.

To make the curry sauce fry onions with curry paste of your choice, or curry powder, then add coconut milk.
Season with salt and maybe more paste, and finally add the meatballs.
If it needs more taste you can add a soup cube with chicken taste.

After I started to make the most of our meals low carb the roast beef is a safe choice.




In the beginning I fried it in the pan and then in the pot, as I had always done.
The problem was that I always felt it wasn’t as tender as I would have liked it, perhaps because the cheap deals on roast beef were not always cut from the best meat.

What do you do?
I thought that after all, roast beef is still one of the best choices for low carb meals.

So I tried different ways to cook roast beef, and I definitely prefer the recipe where I boil the meat!
If you haven’t tried it I’m sure you will think it sounds just as boring as I thought it would be, that is, until I tried it!’
(I have to mention though that I cook it for 5 min.after having boiled it. :-))

The boiled roast beef just before I roasted it in 5 minutes and served it.

Give it a try. The meat becomes so tender, it does not provide as much fat in the kitchen, and it tastes good!

Here is how you do it:

1500 g. Roast beef (is laced like a roast)

water
butter
salt
pepper

Add the meat in a pot of boiling water, boil it for 25-30 minutes. (C-temp. 40 degrees meat thermometer, F-temp. 104 degrees.).

Remove the meat, dry it and rub the meat with plenty of salt and some pepper.

Fry browned in butter for about 5 minutes, turn it to make all sides browned.

Place the meat in a dish and let it rest for 20 minutes without covering it.
Cut the meat into thin slices and serve it




If you want to serve the meat cold for lunch or breakfast:

Let the meat cool slightly before being wrapped and placed in a refrigerator.
When the meat is cold cut it into thin slices.

Low Carb Veggie Burger

I made this veggie burger without a recipe, because I do that often, and it ended up being a really tasty burger.
You can use it for dinner or lunch, we (4 people) had it for lunch with avocado and chili humus, which added something really nice to the fried burgers.

Vegetable burger lunch

Ingredients:

Oil for frying
3 leeks, well cleaned and cut
4 -5 carrots, grated
2 red beets, grated
1 tin of cooked green lenses
(A full handful of chopped kale, though just added because I had it in the freezer)
2 eggs
1 cup of almond flour
1/4 chili
Paprika
Carry
Salt and pepper
finely chopped nuts to use for “breading”




Fry the cut leeks for about 5 -7 min., then add the grated carrots and red beets, the chopped kale too, and fry together with chopped chili, some paprika, carry and salt and pepper until it’s all well done.
Blend the eggs, almond flour and lenses, and mix it with the fried vegetables.

This mixture is a little wet, but form it into burgers, and sprinkle with the blended or finely chopped nuts.

Fry them 4-5 min on each side.

Serve with salad or, as we did, with avocado and chili humus.

Here is an example of an easy and quick low carb evening meal.

Ingredients:
Broccoli
Cauliflower
Leeks
Zucchini
Minced meat

First clean the vegetables well, especially the leeks, to be sure there is no soil hidden between the layers.
Steam or cook lightly the vegetables.

Form the minced meat into hamburgers, and fry them together with the zucchini.
