I made this veggie burger without a recipe, because I do that often, and it ended up being a really tasty burger.
You can use it for dinner or lunch, we (4 people) had it for lunch with avocado and chili humus, which added something really nice to the fried burgers.

Vegetable burger lunch

Ingredients:

Oil for frying
3 leeks, well cleaned and cut
4 -5 carrots, grated
2 red beets, grated
1 tin of cooked green lenses
(A full handful of chopped kale, though just added because I had it in the freezer)
2 eggs
1 cup of almond flour
1/4 chili
Paprika
Carry
Salt and pepper
finely chopped nuts to use for “breading”




Fry the cut leeks for about 5 -7 min., then add the grated carrots and red beets, the chopped kale too, and fry together with chopped chili, some paprika, carry and salt and pepper until it’s all well done.
Blend the eggs, almond flour and lenses, and mix it with the fried vegetables.

This mixture is a little wet, but form it into burgers, and sprinkle with the blended or finely chopped nuts.

Fry them 4-5 min on each side.

Serve with salad or, as we did, with avocado and chili humus.
